Pickled Gherkins

   Sweet and sour pickled Gherkins are really easy to make and there is no cooking involved.  This is a combination of different recipes I have used in the past, before I didn't use sugar and I found the gherkins too sour so I tried it with sugar. The sugar adds a nice sweet taste and also helps with the preserving process. 

  • Ingredients:
1kg Small picking cucumbers
3 small Onion
250g Sugar 
1 tbsp salt
1/2 tsp of each: coriander seeds, peppercorns and dill seeds.
500ml of cider vinegar
Chilli (optional)




Put all the ingredients in a big bowl and pour over the vinegar. Leave over night for all the flavours mix and be absorbed. 



Pack the ingredients into sterilized jars with vinegar proof lids. 



Leave in a cool, dark place for 3-4 weeks to mature before eating.
