Granola

Now that the weather is warmer my girls are not so keen on eating porridge for  breakfast anymore but I have lots of oats waiting to be eaten. They want to eat muesli again, so I got the idea to try and make some granola using the leftover oats.  I found lots of different recipes using different ingredients and I came to the conclusion that granola can be made with anything you fancy.  I made it using whatever I could fined in the cupboard.

This is what I used, like I said you can put anything in it.
400g of oats
100g of 5 grain flake mix
100g mixed nuts, chopped
50g flaked almonds
100g rasions
5 dried apricots, chopped
50g of coconut flakes
1 tbsp of cinnamon
1 tsp of vanilla
I used maple syrup to sweeten it but a lot of recipes use honey, it just depends on taste.  I added the maple syrup bit by bit and tasted it to make sure it wasn't too sweet, but it dose need enough to cover all the ingredients.

I then put it all in a baking tray in a low oven for about 45 minutes. The granola does need to be mixed every 10 minutes too make sure it cooks through.

As soon as it came out of the oven my girls had there fingers in it.  The next morning we ate it for breakfast with yogurt and fruit, it was really delicious and the girls loved it.
