- Ingredients:
3 small Onion
250g Sugar
1 tbsp salt
1/2 tsp of each: coriander seeds, peppercorns and dill seeds.
500ml of cider vinegar
Chilli (optional)
Put all the ingredients in a big bowl and pour over the vinegar. Leave over night for all the flavours mix and be absorbed.
Pack the ingredients into sterilized jars with vinegar proof lids.
Leave in a cool, dark place for 3-4 weeks to mature before eating.
Sounds yummy! Having just grown mini cucumbers for the first time, and having quite a few, I am going to give this a go this afternoon.
